that is fat tissue. when you get a cut that deep, all type of gnarly stuff comes out. i broke my leg snowboarding(compound tib/fib)and fat, tendon and bone could be seen pokin out.  |

I think it kind of looks like muscle tissue, or what JT said, its defenitly not fat tissue though.
